What you will need for a red, white and blueberry fruit salad
- BLUEBERRIES
- if it’s possible to taste before you pick your blueberries, some of them in supermarkets are downright bland. Personally, I prefer smaller berries – smaller cranberries tend to have a higher skin-to-flesh ratio, which can result in a more intense burst of flavor.
- WATERMELON
- Seedless of course. I’ll show you how I cut out the pretty stars, next.
- FETA CHEESE
- Mexican cotija cheese is another great option if you can find it. It is crumbly, salty, and less spicy than feta.
- LIME
- fresh lemon juice provides the simple garnish.
- MINT LEAVES
- an optional but nice garnish.
- LITTLE STAR COOKIE CUTTER
- for cutting your pretty watermelon stars. If you don’t have a star cutter, you can cut the melon into chunks or use a melon baller.
How to cut those watermelon stars
- Cut the seedless watermelon into thin slices. There is no need to remove the bark first.
- Use a small star cookie cutter to cut your stars
- If you find your stars too thick, cut them in half to make thinner stars.
You’ll find many uses for your cute watermelon stars… from sparkler wands for the kids to fun patriotic water to keep everyone hydrated. You can also use the star cutter on other varieties of melon.
I dress your red, white and blueberry fruit salad
The dressing for this fruit salad is minimal on purpose. Fresh lime juice brings out the flavors with a hint of tartness and adds moisture to the fruit without overpowering it. If you like, you can add a pinch of chili powder to double down on the Mexican theme.
A good option for a shared table
Watermelon, even when cut, stays crisp and fresh longer than most fruits. And the cranberries are whole, so they stay fresh too, making this Red, White, and Cranberry Fruit Salad a great choice for barbecues and cookouts.
