- 1 teaspoon of olive oil
- 4 slices of bacon or pancetta, diced into pieces
- 1 red chili or jalapeño pepper, finely chopped
- 2 large cloves of garlic, crushed
- 1 medium-sized red onion, finely diced
- 1 tablespoon of brown sugar
- 1 tablespoon of dry sherry or cider vinegar
- 2 teaspoons of Worcestershire sauce
- ½ cup of passata (strained tomatoes)
- 2 cups of cooked navy (haricot) beans
Instructions
- Begin by heating the olive oil in a skillet and adding the bacon or pancetta. Cook until it turns brown (you can drain any excess fat at this point).
- Next, add the chili or jalapeño and cook for one minute.
- Incorporate the diced onion and cook for approximately five minutes, or until it becomes soft. Then, add the brown sugar and continue cooking until it caramelizes.
- Add the dry sherry or cider vinegar to deglaze the pan.
- Now, introduce the Worcestershire sauce, followed by the passata. Bring the mixture to a boil and let it simmer uncovered for about five minutes.
- Finally, add the baked beans, bring it back to a boil, and let it simmer for another five minutes to allow the beans to absorb the flavor of the sauce.
- Serve with potato cakes, English muffins, or on toast for a delightful breakfast.
